From an ecological perspective, an on-site dairy is the most sensible milk-processing option. Early in the morning every day, the milk producers from the Schönenberg / Hummelwald milk supplier association deliver their milk to the Schönenberg cheese dairy, which is then used to produce 5-6 Sbrinz wheels daily. Whey, the by-product from cheesemaking, is used as feed for the dairy farm’s pigsty. The liquid manure from pig fattening is recycled via the milk producers, who use it to fertilise their meadows and pastures. This completes the circuit within a small area, namely inside the local community. Our slogan is Sbrinz AOP – a cheese that keeps tasting good!
