Herb salad with Sbrinz AOP

For 4 persons
PREPARATION: approx. 30 mins

Ingredients
SALAD DRESSING
– 2 tsp coarse-grained mustard
– 2 tbsp apple vinegar
– 2 tbsp rapeseed oil
– 2 tbsp. tree nut oil, e.g. Huile de noix de Sévery
– 1 shallot, finely chopped
– 1/2 tsp salt
– A little pepper

SALAD
– 60 g purslane
– 60 g baby spinach
– 60 g watercress
– 1 bunch of mixed herbs, e.g. dill, tarragon, parsley, plucked
– Some borage or daisies
1– 50 g Sbrinz AOP, broken into chunks

Preparation
SALAD DRESSING
Mix the mustard with all the ingredients up to and including the pepper.

SALAD
Mix green salads, arrange with flowers and Sbrinz AOP chunks, drizzle with dressing.
