Stuffed snack-size sweet peppers

PREPARATION: about 30 mins

Ingredients
– 250 g snack-size sweet peppers
– 125 g ricotta
– 50 g grated Sbrinz AOP
– 1 egg yolk
– Pinch of nutmeg
– Salt, pepper
– Baking paper for baking sheet

Preparation
Cut 1.5 cm wedges out of 250 g snack-size sweet peppers and deseed. Finely chop wedges and mix together with 125 g ricotta, 50 g grated Sbrinz AOP and 1 egg yolk. Season with a bit of nutmeg, salt and pepper and stuff sweet peppers. Place peppers on a baking sheet lined with baking paper. Cook for 20–25 mins in the middle of an oven preheated to 200°C.
