The Cheese

The Extra-Hard Cheese from the Heart of Switzerland

Welcome to the world's most natural culinary delight – welcome to Sbrinz.

Sbrinz stands for an entirely natural production in line with nature, animals and human beings. Sbrinz cheese dairies and Sbrinz milk producers have agreed to adhere to stringent regulations: no use of additives or genetically modified organisms (GMOs). Sbrinz is almost exclusively produced from milk of brown cattle. The cows feed on grass in summer and hay in winter – no silage or feedstuffs of animal origin or feedgrade urea may be used.

A Cheese with a Character

Sbrinz is an extra-hard full-fat cheese containing 45% of fat in dry matter. It needs time to mature, a lot of time. The minimum age for consumption is 18 months when Sbrinz has become ideal for slicing. It takes, however, as much as about 22 months or even longer for Sbrinz to develop its full flavour. The more mature the cheese, the more aromatic and spicy its taste. Sbrinz is, in fact, the only Swiss cheese that may be savoured in three different ways:

Sbrinz Chunks

Sbrinz chunks and an excellent glass of wine or sparkling cider is a sure winner with your guests. Use a Sbrinz chisel to break (not cut) some morsels off a piece of ripe Sbrinz cheese.

Sbrinz Sliced Curls

The cheese from the heart of Switzerland may also be enjoyed as fluffy waver-thin curls. Sbrinz sliced curls are available at cheese dairies or may be shaved with either a Sbrinz slicer or an ordinary peeler.
